Tofu with a twist

 Today was the last day of Ramadan, so I woke up early in the morning. I finished my daily routine. I cleaned and did some laundry. After my break, I cooked my daughter's favourite dish. I baked spicy tofu and boiled some basmati rice for supper.  I will share both recipes with you.

Baked Tofu

One tablespoon- all purpose flour 


Ingredients:



200g - tofu (pressed and cut in small cubs)


One teaspoon - coriander powder


1/2 tsp- cumin powder


One tbsp- rice vinegar or white vinegar


Two tbsp- soy sauce


One tbsp canola oil ( or whichever you like)


One tsp- ginger powder


1/2 tsp- garlic powder


One tsp- sriracha sauce (if you like it spicy)


Method:


In a bowl put tofu cubes and add all the ingredients. Mix with a silicone spatula. Marinate for at least 30 minutes, and bake at 350 for about 30 minutes.

Boiled Basmati rice


Ingredients:


One cup- Basmati rice


One tsp- salt


One tsp- Lemon 🍋 juice or white vinegar


One tbsp cooking oil


Method: wash rice with cold water. In a saucepan add 4 cups of water then add salt and rice that is already washed. Boil rice on high heat until 3/4 cooked. Drain the rice and put it again in the same saucepan. Pour cooking oil on top of the rice and cover the pan. Put at low heat and cook for 5 minutes. Serve with your favourite vegetable or lentils. Next time I will share some lentils recipes.
